Tapas style potato dish

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Tapas style potato dish

I made a potato dish the other day as I had been given a bag full of new potatos that needed using up.
This is a really cheap recipe and can be eaten hot or cold.

1lb new potatos.
8/10 banana or normal shallots
oil for cooking
2 teasp ready made mustard
1 teasp chilli flakes
1 green pepper finely sliced.
Tin of chopped tomatoes or passata
1/4 pint of veg stock.


Cut the washed potatos in half length ways ( skin on)
Cut the shallots in half lengthways and add both to a large frying pan with the oil in.
Cook for a few minutes until the shallots turn transparent.
Add the mustard, chilli flakes and green pepper and cook for 5 minutes.
Add the tinned tomatoes and veg stock and bring to the boil.
Simmer for 25 mins and then transfer into an oven proof dish and place in a medium oven to continue cooking, turning occasionally until the potatos are cooked through and the tomato sauce thickens and the potatos crisp up around the edges.

A lovely dish which can be eaten hot or cold.
