Non-dairy quiche
Has anyone got a tried and tested recipe for a non-dairy quiche please? My friends coming over and doesnt eat bacon or cheese. What flavours are going to be strong enuf to make a quiche tasty without those ingrediants? Ive got goats cheese and feta cheese, perhaps I could put those of the top? (im assuming those are not classed as dairy
)
Cheers

You are confusing me because first of all what will you use in place of milk in the quiche? And surely all cheese is dairy, and so is the butter in the pastry?
I've re-read your thread and I think you mean, not non-dairy, but just no bacon or cheese? So how about a provencale tart or asparagus quiche or - well I think there's plenty of things you could make.
Onion is strong enough on its own anyway as we used to love the frozen onion tarts (quiches) we could get from one of the supermarkets but they stopped making them sadly!

Hi M3, I like to confuse lol
My friend is dairy intolerant but butter isnt such a problem so the pastry will be OK. I was going to use soya milk in the mixture instead of normal. And I thought the dairy intolerant thing was cows products not goats?

You can get non dairy cheese - made from soya. I don't know how well this cooks as I've never eaten it. You can use margarine/lard (if friend isn't veggie) in the pastry too if the butter is a problem.
Goat's cheese MIGHT be ok for your friend, but your friend may also be intolerant to that as well as the cow's milk. I wouldn't risk it unless you check with your friend first
Mmmmm drooling at the thought of onion quiche! I know what I'm having for lunch today now.
Salmon is good in quiche - either smoked or unsmoked.

There's very good vegan marge around, too - so that's always an option for the pastry. I fact, I rarely use butter for pastry - only for very special recipes!
And yes, definitely find out whether it's cow's dairy she can't take, or all dairy. Goats' cheese tarts are delicious; but you can make quiche with tofu, too - never tried that, I love my cheese too much!
There's smoked tofu, too - gives an extra bit of flavour.

I reckon goats cheese would be fine, although obviously check to be on the safe side. Im intolerant to all cows dairy products but goats products are fine. I suspect your friend will be the same.

I'd check on the goat's cheese issue too. I have sensitivities to dairy myself, it makes me deaf and sneezy. I tried goat milk products but found they affected me just as much. Incidentally, soya has much the same effect. As to flavourings for the quiche, both tarragon and mustard complement eggs well, though probably not together, greens like spinach would work, and a touch of nutmeg, or cumin and coriander would go with the egg/spinach combination very well.
Oh, there's always veggie bacon, if your friend likes the taste of bacon but is avoiding it for health or ethical reasons. I find the Quorn bacon to be the best, though I think it does contain dairy products, so you might want to check that first.

Here´s what I adapted whilst I was dairy-free for a while:
Vegan pasty (a la Cranks) - sorry my book has disintergrated now, but I´m sure someone here can post if you can´t find a recipe on the web. It´s very basic: usual flour with a mix of roughly half and half (I think) oil and water, until you get a pastry consistency.
Line an oiled tart case with that and blind bake. Mix a little mustard with some passata (sieved tomatoes), in roughly equal proportions. Spread on the bottom of the tart case, you don´t want the topping swimming in the mixture so not too much.
Peel (if you can be bothered) the tastiest tomatoes you can find, slice and arrange on top with a little thyme sprinkled over it. Bake as you would any normal quiche.
Voilá!

Does the friend eat other meat and just not bacon or are they vegetarian?
