yummy garlic and dill butter beans!

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

yummy garlic and dill butter beans!

i fist came accross this dish when i was living in greece. it was one of my favorate things to order at my local taverna. its so yummy i asked for the recipe and started making it myself. i thought id share it with you guys, so here it is:

ingridents:

olive oil
garlic
red onion
dill
butter beans
salt & pepper
vegtable stalk

the amounts are not exact, just ajust to suit your taste.

put a good fue glugs of olive oil in a pan.
thinly slice the onion and fry in the olive oil.
add about 1/2 a bulb of chopped garlic.
add 1 tin of butter beans in water, including the water ( alternitavly you can use dryed beans, soaked over night then cooked in boiling water, drained but reserve 1 cup of the water to add with the beans to the onions).
add about 1 heaped tsp of dryed dill or a handful of fresh chopped dill.
add 1/2 liter of veg stalk (1 stalk cube in 1/2 liter of boiling water)
and salt and pepper to taste.
simmer and reduce until the sauce has thickened slightly.

eat with fresh bread to dip in and soak up the sauce.

MMMMMM, YUMMY! ENJOY! :iconbiggrin:

ps. it is also possible to jar this dish to store for the winter.

just fill big jam jars with the cooked beans, put the lids on and put each jar inside a sock ( or warp in cloth ), put the jars into a big pot/pressure cooker, cover with water and boil for 20min to steralize. then the jars can be stored in a cool dark place for later use. they will keep unopened for up to 6 months.

Oh god I just love Greek beans, the butter beans or smaller beans, and no matter what recipe I follow it never, ever tastes like the Greek version! I've only tried the tomatoey ones though as that's all I've ever had there.

I've just realised reading that recipe that you mean veg STOCK, not veg stalks! Did think that sounded a bit strange! I must try this whilst I still have loads of fresh dill in the veg patch. :thumbright:

Sounds fabulous, and I love the idea of bottling it.

Do you think other herbs could be substituted for dill? I love it my gal hates it - it gives her a pain in her face (like eating ice cream!). I think rosemary would be good.

This sounds really nice, thanks for posting Demi. I like the idea of using rosemary as well GA. Time to get a loaf in the oven, bet it'll make a good Saturday lunch for a freezing cold day.

i guess you could experiment with different combinations off favours, let me know what works :thumbright:
