Lemon drizzle cake

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Lemon drizzle cake

6oz caster sugar
6oz butter
3 eggs
6oz self raising flower
2tbsp lemon curd
1 lemon
2tbsp granulated sugar

Heat the oven to 180c/gas mark 4. Cream the butter & caster sugar, add the eggs 7 mix well, sieve in the flour & mix, fold in the lemon curd. grease a cake tin & line the bottom with greaseproof paper. pour in the mixture & put in the oven for about 40 minutes. Remove from the oven & turn out removing the greaseproof paper, turn it the right way up. Grate the rind of the lemon onto the cake & poke it beneat the surface with a knife, then squeeze the lemon juice onto the cake & sprinkle with granulated sugar. Theoretically serves 8 but generally serves 2 as it doesn't last long enough for guests to come around.

mmmmm that sounds good,wish i had lemon curd,must get some,the kids would love this too,just think with plenty of custard dosn`t bear thinking about,

my mouth is watering, ok we've got no lemons but i'm off to make crumble with the blackberries i've just picked ont he way home.
the ever growing luvpie household currently contains, 4 boys, 4 chickens, 2 cats, 2 rabbits, 4 fish, an empty tropical fish tank waiting new arrivals, now are we daft to look at our broody hen thinking, if we got some fertilised eggs........

Ooh ! lemon drizzle cake! That reminds me of my mum making a similar cake when we were kids. We loved it! I am not really one for making cakes and sweet stuff but I might just give it a try. Thanks. :flower:
