6oz caster sugar
6oz butter
3 eggs
6oz self raising flower
2tbsp lemon curd
1 lemon
2tbsp granulated sugar
Heat the oven to 180c/gas mark 4. Cream the butter & caster sugar, add the eggs 7 mix well, sieve in the flour & mix, fold in the lemon curd. grease a cake tin & line the bottom with greaseproof paper. pour in the mixture & put in the oven for about 40 minutes. Remove from the oven & turn out removing the greaseproof paper, turn it the right way up. Grate the rind of the lemon onto the cake & poke it beneat the surface with a knife, then squeeze the lemon juice onto the cake & sprinkle with granulated sugar. Theoretically serves 8 but generally serves 2 as it doesn't last long enough for guests to come around.

Re: Lemon drizzle cake
Ooh ! lemon drizzle cake! That reminds me of my mum making a similar cake when we were kids. We loved it! I am not really one for making cakes and sweet stuff but I might just give it a try. Thanks.
