Does anyone know where (in the SE of UK) I could buy some Amyalse (http://en.wikipedia.org/wiki/Amylase) from? My faithful shop in bristol didn't have any when I was visiting recently and I know nowhere in the South East :( I would be greta if I could find a supply in central europe!!

Are you sure it's starch, vancheese? (Or have we already had this conversation? :dontknow: :iconbiggrin: ).

If it is starch and you use amylase at this stage, the effect will be to sweeten your wine - sure that's what you want?
