Does anyone know where (in the SE of UK) I could buy some Amyalse (http://en.wikipedia.org/wiki/Amylase) from? My faithful shop in bristol didn't have any when I was visiting recently and I know nowhere in the South East
I would be greta if I could find a supply in central europe!!

Are you sure it's starch, vancheese? (Or have we already had this conversation?
).
If it is starch and you use amylase at this stage, the effect will be to sweeten your wine - sure that's what you want?
