Hazelnut milk
If you’ve been lucky enough to grow or forage an abundance of hazelnuts then this is a great way to use them up. It also makes a delicious alternative to cows milk.
Method – makes around a pint
Shell the hazelnuts and half fill a breakfast bowl with them.
Top the bowl up with water and soak overnight
Discard the water and place the soft hazelnuts in a blender
Top up with around a pint of water (approx 550mls)
Blend the mixture
Pass it through a sieve or muslin bag and squeeze
Bottle and refrigerate
You’ll be left with the husks of the nuts which I found could be used as a spread when mixed with a little vegetable oil
